On winter weekends, I look forward to slow mornings – making a hot breakfast while sipping on some hot tea. Inspired by a recipe in Laura Lea Balanced first cookbook, I make this chia oatmeal when I’m craving something warm…and quick. It’s simple, yet flavorful – with all of your necessary nutrients to sustain you through the morning. Below is a loose recipe of how I put these oats together.
INDREDIENTS
For the Oatmeal…
- 1/2 c. old fashioned oats
- 3/4 c. water
- 1-2 tbsp. chia seeds
- pinch of cinnamon
- 1 tsp. coconut oil
- 1 tbsp. nut butter (I used almond)
For the Fruit Compote…
- 1 to 2 c. frozen or fresh berries
- splash of water
- splash of pure maple syrup
Extras…
1 tbsp. Hemp Seed and/or Ground Flax Seed
DIRECTIONS
For the Oatmeal…
Combine oats and water over medium heat. Stir in chia seeds, salt, and cinnamon. Bring to a simmer and cook until oats have absorbed all the water. Mix in nut butter and coconut oil.
For the Fruit Compote…
Add berries to a sauce pan with a splash of water. Cook on medium/high heat until berries are cooked down and most of the water is gone. Add a splash of maple syrup if you like a bit of extra sweetness.
Add your cooked oats to a bowl. Top with fruit compote, ground flax seed and/or hemp seeds. Enjoy!
